The Sous Chef at Petit Crenn Melbourne is responsible for assisting the Head Chef to oversee the culinary operations and the team in this exciting new signature restaurant, scheduled to open in October 2026 and centrally located in the historic InterContinental Melbourne the Rialto.

A little taste of your day to day:
The responsibilities of this role may include but will not be limited to the following;
Deliver an impeccable dining experiences, through the production of quality, consistent food preparation, taste & presentation of the menu in accordance with the standards.
Supervise daily kitchen operations, including food prep, cooking in service and plating;
Work closely with the front-of-house teams to ensure seamless service;
Interact with guests to gather feedback and enhance their dining experience;
Control wastage and portion control effectively;
Monitor food costs and implement measures to control expenses;
Manage quality control systems for kitchen operations & food safety;
Supervise, help to train and coaching team members to expand and enhance in-house skill sets;
Ensure all incidents and injuries are addressed immediately, documented, investigated and corrective actions implemented;
Ensure compliance with all food safety and hygiene regulations.
Any other duties as requested by your manager.
What we need from you
Valid and unrestricted work rights in Australia.
5 years’ experience working as a chef in high-end specialty restaurants with at least 2 -years supervisory experience in kitchen operations in a similar role supervising a team
Certificate IV in Commercial Cookery or equivalent is essential
A true love of good food
Ability to inspire passion, enthusiasm and positivity in the team to drive an engaged, winning culture.
Excellent verbal and written communication skills and the ability to engage well with both the team and guests
Understanding and demonstrated adherence to Australian food standards
Mandatory certifications including Food Safety Certificate and First Aid.
Experience working in an open kitchen environment would be an advantage
